To the best of my knowledge, I have seen 24 films that were released in 2007. Wait now I've seen 26. "*" represents the two movies I saw after I wrote this post and before 2008.
I am going to attempt to rank them in the order of how much I liked them, not by any kind of artistic merit, just by my overall enjoyment from "loved" to "disliked" in that order. Here goes...

"Once" was a very lovely movie. I really hope it get some Oscar nods this year. (The same with Lars). I saw 11 of those you listed. You ranked Pirates a bit higher then I would have, as with Rattatouile. You need to rent 3:10 to Yuma. I think you and I should be the next Ebert & Roeper.
Glad to see that Disney is not in the top 5. Another good movie to see (and I find it hard to believe that I've seen something you haven't!) is Dan in Real Life.
